Mini Pie Bites

These little pie bites are SO EASY to throw together and look so cute and gourmet! I did a few different ones…Banana Cream Pie Bites. Chocolate Mousse Pie Bites. .Coconut Cream Pie Bites and White Chocolate Strawberry Pie Bites.
Ingredients
- Pillsbury refrigerated pie crust
- CHOCOLATE MOUSSE PIE TOPPING
- 1 (3.9 oz) box instant chocolate pudding mix
- 1/2 cup water
- 1 (14 oz) can Sweetened Condensed Milk
- 1 (8 oz.) container Cool whip
- 1 cup chocolate chips, melted to smooth consistency
- ALMOND WHITE CHOCOLATE PIE TOPPING
- 1 (3.9 oz) box instant white chocolate pudding mix (can be substituted for coconut cream or banana cream as well)
- 1/2 cup water
- 1 (14 oz) can sweetened condensed milk
- 1 (8 oz) container Cool Whip
- 16 oz cream cheese, softened
- 1 tsp almond extract
Preparation
Step 1
Using an already made pie crust dough (I love the Pillsbury brand) cut out shapes with a small cookie cutter and bake according to directions.
Watch closely so they don’t over cook.
While Pie bites are cooling, prepare pie toppings
CHOCOLATE MOUSSE PIE TOPPING
In a large bowl, mix chocolate pudding mix, water, and sweetened condensed milk.
Stir in melted chocolate chips.
Fold in 8 oz. container of cool whip until there are no streaks remaining.
Place filling into a piper with a large tip and pipe onto pie crusts.
ALMOND WHITE CHOCOLATE PIE TOPPING
In a large bowl, mix chocolate pudding mix, water, and sweetened condensed milk together.
Fold in 8 ounces cool whip.
Beat in cream cheese and almond extract.
Place filling into a piper with a large tip and pipe onto pie crusts.
Top pie crusts accordingly with strawberries and chocolate, bananas, coconut, whipped cream and mini chocolate chips.
