HAM AND ONION EGG FRITTATA

- Ingredients: •6 eggs, beaten
- 1/2 cup chopped roasted onions
- 1/2 cup chopped country ham
- 1 tablespoon chopped parsley leaves
- 1 ounce Parmesan cheese, grated
- 1/2 teaspoon black pepper
- Pinch of salt
- 1 teaspoon of butter

Instructions: 1.Preheat oven to a broil setting or 450 F.
2.In large bowl, whisk together eggs and salt.
3.Heat a 12-inch, non-stick, oven-safe sauté pan over medium-high heat. Add butter to the sauté pan and melt.
4.Add onion and ham (or your own mix of ingredients) to the pan and sauté for 2 to 3 minutes. Season with salt and pepper, then stir in parsley.
5.Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set on top.
6.Sprinkle with Parmesan.
7.Place pan into pre-heated oven for 5 to 10 minutes, or until lightly browned and fluffy.
8.Remove frittata from pan and cut into 6 slices. Serve immediately and enjoy.
