Creamy Wild Rice

Ingredients

  • 2 c cooked wild rice
  • 1 Tbsp unsalted butter
  • 1 Tbsp small diced carrot
  • 1 Tbsp small diced celery
  • 1 Tbsp small diced onion
  • 1 Tbsp small diced red bell pepper
  • 2 Tbsp small diced crimini mushrooms
  • 1/2 tsp salt
  • 1 tsp freshly cracked black pepper
  • 1/4 tsp cayenne pepper
  • 1 c heavy cream
  • 2 Tbsp whole-grain mustard
  • 1 Tbsp chopped Italian parsley leaves

Preparation

Step 1

In a small saucepan, over medium heat, melt butter. Add the vegetables and sauté for 4 to 5 minutes. Season with the salt, black pepper and cayenne.

Stir in the cream and add the cooked wild rice and the mustard. Combine well and reduce the heat.

Simmer until the cream has thickened, about 5 to 7 minutes. Adjust seasoning, if necessary, stir in the parsley and serve immediately.
