Lemon Rosemary Balsamic Roast Chicken

Ingredients
- Marinade:
- 5 cloves garlic, minced
- 1/3 c. dijon mustard
- 1/3 c. brown sugar
- 1/4 c. olive oil
- 1/3 c. balsamic vinegar
- 2 tblsp. fresh lemon juice
- 2 tsp. grated lemon zest
- 2 tsp. fresh rosemary
- Chicken:
- 1 chicken cut in 8ths
- 6-8 sprigs 2 inch sprigs fresh rosemary
- 1/2 lemon, thinly slices

Preparation
Step 1
1. In a bowl combine all ingredients for marinade.
2. Place chicken in ziploc bag, add marinade.
3. Marinate at least 6 hours or overnight.
4. Preheat oven to 400.
5. Place chicken in baking pan skin side up.
6. Pour marinade over chicken & add rosemary & lemon to the pan.
7. Cook chicken about 1 hour, basting occasionally.
8. Remove chicken to a platter.
9. Tilt pan to 1 corner & remove fat if possible.
10. On stove yop in pan or transfer gravy to a pot heat to boling. Reduce to thicken.
11. Spoon gravy over chicken.
