Brunch Seafood Strata
- 1 T butter
- 1 C chopped onion
- 4-8 " flour tortillas
- 4 oz. cooked, small shrimp
- 4 oz. flaked cooked crabmeat-1/2 C (or imitation)
- 1 C. Grated Swiss cheese
- 1/2 C grated mozzarella cheese
- 1 T chopped fresh dill or 3/4 t dried dill weed
- 3 eggs
- 1 1/2 C milk
- 1 T flour
- 1/3 t pepper
Spray a 2 qt. baking dish. In a med skillet melt butter and cook onions until clear. Tear tortillas into bite-size pieces. In the baking dish layer half tortilla pieces, half onions, half shrimp and crab and cheeses then dill. Repeat layers.
Beat egg mixture and pour over. Cover and refrigerate overnight.
Bake uncovered @ 350 for 45-50" or knife inserted in center comes out clean and top is brown. Let stand 5", cut into squares and serve.
