Parsnip Meatball Soup

This is a tradition Chinese soup. I learned how to make it from a friend in Beijing.

Ingredients
- 200 grams ground beef
- 1 egg
- 1 tablespoon finely chopped fresh ginger
- 1 tablespoon finely chopped leek
- 1/4 teaspoon white pepper
- 1 teaspoon salt
- 1 parsnip
- 3 cups water
- 1 bunch cilantro

Preparation
Step 1
1. Mix beef, egg, ginger, leek, white pepper, and salt together.
2. Wash the parsnip and cut into 2 cm chunks.
3. Bring water to a boil. Add parsnip chunks, return to a boil, then simmer 15 minutes.
4. Scoop in spoonfuls of the ground beef mixture to form small meatballs. Simmer 3-5 minutes or until meatballs are cooked through.
Variations: Use ground mutton instead of ground beef to make meatballs.
