Lucky Mushroom, Carrots, and Snow Pea Stir Fry

Ingredients

  • 1 T grapeseed oil, or your favorite wok oil
  • 1 T ginger root, peeled, and minced
  • 8 oz small mushrooms, rinse and pat dry with a paper towel, keep them whole for luck
  • 1 C carrots, shredded
  • 3 C snow peas, leave whole
  • 1 T soy sauce, low sodium
  • 1 T dark sesame oil

Preparation

Step 1

When the wok is heated to the point where it is very hot if you hold your hand over the it (do not touch the wok!), add the oil and swirl it around.

Add the ginger and stir constantly for 1 minute.

Add the mushrooms and stir for 3 minutes. The mushrooms will brown a bit.

Add the carrots, lower the heat to medium high and continue stirring for two minutes.

Add the snow peas and stir for 2-3 minutes.

Add soy sauce and stir until the snow peas are done to your satisfaction. They should be crispy tender. It will only take a minute or two.

Tip the veggies into a pretty bowl and drizzle with the sesame oil. Toss and serve immediately.

For the best luck of all, serve with long noodles or day old rice.

Option: to spice at the table use a little dab of Asian chili garlic sauce.

Wok Hints:

Prep all the ingredients before beginning. This is a quick dish to make, and requires your full attention while cooking.

Always begin wokking at high heat reducing the heat at any time you need to in order to prevent smoking. Each addition of veggies reduces the heat in the wok to medium high. When the wok is hot again, add the next veggie.

As you add more ingredients, you may find it easier to move all the ingredients around if you use two wooden spoons and stir in a constant folding motion.
