Ingredients

    clove garlic clove minced

    medium onion - diced

    medium carrot - diced

    medium sweet red peppers diced

    stalk celery diced

    small zucchini - diced

    cups green cabbage shredded

  • 2

    cups swiss chard chopped

    cups cauliflower small florets

    cups broccoli small florets

    tsp thyme fresh chopped

    cups vegetable broth

    tbsp parsley or chives fresh chopped

  • 1/2

    tsp table salt or to taste

    tbsp fresh lemon juice optional

Directions

Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer 10 minutes. Stir in parsley or chives, season to taste with salt pepper and lemon juice. 1 cup per serving
