Ingredients
- 10 TO 15 LB PORK LOINS ( TYPICALLY 3 TO 5 LB EACH )
- 1 GAL APPLE CIDER
- 3 OZ INSTA CURE # 1
- 1/4 CUP HONEY MOLASSES SWEETNER
- 2 CUP BROWN SUGAR
- 2 TBSP GROUND ALL SPICE
- 3 TBSP BLACK PEPPER
- 1 TBSP GROUND CLOVES
- 1 TBSP ONION POWDER
- 1 TBSP GARLIC POWDER
- 1/4 CUP GROUND MUSTARD
Preparation
Step 1
MIX INGREDIENTS TOGETHER THOROUGHLY SEVERAL TIMES, REMOVING FOAM AT TOP PLACE INTO TUPPERWARE TYPE CONTAINER ALONG WITH MEAT, THEN INTO FRIDGE. TURN TWICE A DAY. CURE FOR 7 DAYS,
REMOVE FROM FRIDGE AND RINSE, LET AIR DRY,
SMOKE AT 225 F WITH APPLE OR MAPLE WOOD FOR NO MORE THEN 4 HOURS OF SMOKE, CONTINUE TO COOK TILL AN I.T OF 145 - 150. THEN PULL, LET COOL AND PLACE BACK IN FRIDGE TO FIRM UP, SLIDE NEXT DAY FOR BEST RESULTS.
MAY SUBSTITUTE ½ GAL APPLE CIDER FOR ½ GAL WATER.
