Baked Salmon with Vegetables

Ingredients

  • 4 6 oz. salmon steaks
  • juice of 1/2 lemon
  • 4 oz. cream cheese
  • 1/2 cup tomatoes
  • 1/2 cup mushrooms
  • 1/4 cup fresh chives
  • 2 Tbsp. Italian parsley
  • Salt and pepper to taste

Preparation

Step 1

Place salmon in a shallow, greased baking dish. Drizzle lemon juice over the fish. Combine softened creamj cheese with salt and pepper in a small bowl. Chop tomatoes, mushrooms, chives and parsley and add to cream cheese mixture. Top salmon with vegetable mixture. Bake, uncovered, in a 400 degree oven until fish flakes easily, about 12 to 15 minutes. Garnish with fresh chives and lemon wedges, if desired.
