Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 chopped garlic cloves
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 15 oz. Can diced tomatoes
  • 1 can chipolte in adobo chopped and a few spoonfuls of sauce
  • 1 14 oz. Can chicken broth
  • 2 tbsp creamy peanut butter
  • 2 oz. Semi sweet chocolate chip
  • 1/2 tsp salt and pepper

Preparation

Step 1

Heat oil in a deep soup pot over medium heat.
Add onion and cook till translucent.
Add garlic and spices and cook for another minute until very fragrant.
Add diced tomatoes, chipolte pepper and sauce, broth, peanut butter, chocolate chips.
Stir well, cover and simmer for 10 minutes.
Uncover pot and blend till smooth with immersion blender.
Add chicken and cook for 40-45 minutes till shreddable.
