Ingredients

  • # Sweet potatoes, cooked, peeled cut into ½-inch cubes

  • # Celery, thinly sliced on an angle

  • 2

    # Pineapple tidbits, well-drained

  • 10

    oz raisins

  • 9

    oz Walnut halves, toasted

  • Hellmann’s® Real Mayonnaise

  • Sour Cream

  • 3

    TBS Orange peel, grated

  • tsp Ginger, ground

  • tsp Salt

  • Bibb lettuce leaves

  • Pineapple leaves, trimmed to size

  • Red Bell pepper strips

Directions

1. Combine ingredients. Stir to blend. Pour over sweet potato mixture; toss lightly to coat. Chill before serving. 2. For each serving: Line salad plate with lettuce. Spoon 8 oz potato salad on top. Garnish with pineapple leaves and pepper strips.
