Thai-inspired grain and bean salad

Ingredients

  • 2/3 c. dry bulghur
  • 2/3 c. dry red lentils
  • 1 (400 g.) can black beans, rinsed
  • 2 t. tamarind paste
  • 2 t. fish sauce
  • 1 T. Thai red curry paste
  • 1 T. low sodium soy sauce
  • 1 t. dried basil or 1 T. fresh basil, chopped
  • 1/4 t. ginger powder
  • 1/4 t. garlic powder
  • Juice of 1/2 lime,

Preparation

Step 1

1. Cook the bulghur and lentils according to the package directions. Cook the black beans in salted water over low heat for 30 minutes. Drain everything and mix together the cooked bulghur, lentils, and black beans.
2. Add all other ingredients and mix together well.
