Ingredients
- 4 slices bacon, chopped
- 2 cloves garlic, chopped
- 2 # scallops
- 1 bunch scallions (about 8), cut into 1 inch pieces
- 1 cup chicken broth
- 1 can (15 oz) corn kernels
- 1 tomato, cored, seeded, and chopped
- 1/2 tsp seafood-boil seasoning
- 1/2 tsp salt
- 1/8 tsp thyme
- pinch of cayenne pepper
- 2 cups instant brown or white rice
Preparation
Step 1
Cook bacon and garlic in saucepan over medium heat for 6 minutes. Add scallops and scallions; saute 3 minutes. Add chicken broth, corn kernels, tomato, boil seasoning, salt, thyme, and cayenne; cook 3 minutes. Add rice; cover and simmer 8-10 minutes or until rice is tender. Serve at once.
