Chocolate Zucchini Bread

Grandma's recipe - but I added more shredded zucchini to make it so moist there's no way you can turn it down! You can make this recipe with 2 loaf pans or 1 9x13 cake pan. Enjoy!

Ingredients

  • 1/2 c. margarine (I have used real butter)
  • 1/2 c. canola oil
  • 1 3/4 c. sugar
  • 2 eggs
  • 1 teasp. Vanilla (I don’t measure… )
  • 1/2 c. buttermilk (I have used just skim milk if you don’t have this)
  • 5 Tblsp. Cocoa
  • 1/2 teasp. Cinnamon
  • 1/2 teasp. Cloves
  • 3-4 c. shredded zucchini (lean more toward the 4 c. side…)
  • 1/2 teasp. Baking powder
  • 1 teasp. Baking soda
  • 2 1/2 c. white whole wheat flour
  • 1/2-1 c. chocolate chips

Step 1

-Mix the above ingredients and divide evenly between 2 loaf pans or 1 9x13 cake pan

-Bake a 350 degrees for 30+ minutes (start checking at 30, then every 5-10 mins after, with toothpick)
