Raw, Vegan Mock-Caesar Salad

Ingredients

  • 1 ripe avocado
  • 1/4 cup water
  • 4-5 cloves of garlic, minced
  • 1 Tablespoon dijon mustard
  • 2 Tablespoons nutritional yeast
  • 1 Tablespoon raw apple cider vinegar (I prefer Bragg’s brand)
  • juice of half a lemon
  • 1/4 teaspoon sea salt
  • black pepper, to taste

Preparation

Step 1

Throw all the ingredients in a blender, and blend until smooth and creamy. Adjust seasonings to taste, if necessary.

For your Caesar salad, simply chop up a head of Romaine and toss it generously with dressing:

Garnish with an extra dash of nutritional yeast, and enjoy!

This was a delicious and light lunch.

Ahhh I love Caesar salads, but they always have dairy and eggs! Thank you for making a raw version WITHOUT tofu!

Hmmm…this recipe sounds great (chicken caesar salad is a dinner that EVERYONE at my house loves), but the candida cleanse that I’m looking into says no vinegar and no yeast. How does that work?

You can use lemon juice in place of vinegar in many recipes, if you need to! Most experts don’t believe that nutritional yeast feeds yeast, so it’s thought to be safe for candida diets.

Hi! I am planning on making this tonight, I am just wondering how much this recipe makes? Enough for more than one person?

So delish! I didn’t have an avocado so I used cashews for the cream base and it turned out amazing. Can’t wait to try it again with the avocado. Maybe husband tried it and said it tasted like it had mayo in it…silly man!
