Ingredients

  • 1/2 pound chopped dates
  • 1/2 cup water
  • 1 1/4 cup sugar
  • 1 cup chopped nuts, optional
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 2 cups sifted flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

Step 1

In a saucepan, bring dates, water, and 3/4 cup sugar to a boil.

Continue to boil for five minutes or until thick. Remove from heat and add nuts. In a separate bowl, mix brown sugar, remaining white sugar, butter and egg.

Add flour, soda and salt. Mix dough and divide into two parts. Place each piece of dough between two waxed paper sheets and roll out until fairly thin.

Cover each piece of dough with half of the date mixture and roll up. Refrigerate rolls for 2 hours then cut into slices. Bake cookies at 325° F for 12 minutes.
