Ingredients
- 1 lb. dried beans-baby lima or navy
- 1/2 Tbs dry mustard
- 1/3 cup brown sugar
- 1/2 cup molasses
- 1 medium onion
- 1 tsp salt
- 1/2 tsp pepper
- 1 # diced bacon
Preparation
Step 1
Soak beans overnight in plenty of water. Next day par-boil gently for 10 minutes, drain and place in bean crock with the rest of the ingredients. Stir to mix and add enough water to cover. Bake 300 oven for 6-8 hours covered. Chcek every 2-3 hours and stir. You may need to add extra water.
Partially cook bacon before adding to crock. Helps to cut down on the amount of grease in the beans.
