Ingredients
- 2 lbs. carrots, cut into thin coins
- 1/2 tsp. salt
- 1 tbsp. flour
- 1/2 cup honey
- Dash powdered ginger
- 2 tbsp. sugar
- 2 tbsp. oil
- ~1/2 cup water (from boiled carrots; keep another 1/2 cup in case syrup is too thick)

Peel and slice carrots. Cook in water and salt in large pot approximately 30 minutes (or less). Drain, reserving about 1 cup cooking liquid, and return carrots to pot. Mix a few tablespoons of cooking liquid with flour. Mix together honey, ginger, sugar, and oil. Dissolve in 1/2 cup cooking liquid, less the few tablespoons used to mix with flour. Mix together flour mixture and honey mixture. Pour over the carrots, and cover pot. Cook at a slow boil for 1 hour, stirring occasionally. Be careful not to let the honey burn on the bottom of the pot. After an hour, it will still be quite liquid-y. Stir more frequently as it gets thicker (approximately another hour), and add more cooking liquid if it gets too thick. Finish off in the oven at 300-350° for another hour or so.
