Quick Red Beans and Rice

Ingredients

  • 2 cups chopped onion
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1/4 tsp red pepper
  • 1 (8 oz) can tomato sauce
  • 1 tsp worcestershire sauce
  • 1/4 tsp hot pepper sauce
  • 3/4 pound fully cooked kielbasa sausage, cut into 1/4 inch slices
  • 2 (15 oz) cans red beans or pintos, drained
  • 3 cups hot cooked rice
  • Hot sauce

Preparation

Step 1

Combine onions, garlic, bay leaf, red pepper, tomato sauce, worestershire sauce, pepper sauce, sausage and beans in a large saucepan or dutch oven. Bring to a boil. Reduce heat, cover and simmer 15 minutes. Remove bay leaf. Serve rice over beans. Serve with hot pepper sauce.
