Ingredients
- 2 tsp cayenne
- 2 tsp black pepper
- 2 # beef shank
- 1 1/2 # brisket
- 2 qt beef stock
- 3 c onion chopped
- 1 can tomato paste (6 oz)
- 1/2 c rice
- 1/2 c scallions

Step 1
1. Rub the peppers into the meat, let sit 30 minutes
2. Place meat in pot, add beef stock, onion and tomato paste
3. Simmer 2 hr, while skimming
4. Add rice cook 30 min
5. Stir in scallions and serve
