Ingredients

  • 1 1/2 cups sugar
  • 3 tablespoons flour
  • 1/2 teaspoon nutmeg
  • 1 tablespoon butter
  • 2 eggs
  • 3 cups chopped rhubarb
  • Unbaked pastry shell - (use recipe from food processor cook book)
  • Preheat oven to 450° F.

Preparation

Step 1

Blend sugar, flour, nutmeg and butter.
Add eggs; beat until smooth.
Add rhubarb.
Pour into unbaked pie shell.
Top with fancy-shaped pastry crust.

Bake at 450° F for 10 minutes.
Reduce heat to 350° F and bake until filling thickens, about 45-50 minutes.
