Cilantro Adobo Baked Tilapia

This recipe is tha shit! If you like cilantro and Tilapia then you'll love this shiz. I had this at a restaurant and looked around and found the parts and was not exactly sure how it goes together but this was my best guess and it turned out just as good. This has the tilapia with the cilantro adobo on top and some veggies with a cilantro compound butter. It was friggin delicious! The picture is just the closest thing I could find because I toats forgot to take a damn picture. anywho I hope you enjoy.

Ingredients

  • Tilapia - couple pieces
  • veggies of your choice. I like
  • zucchini
  • squash
  • onions
  • red bell pepper
  • garlic
  • corn
  • olive oil
  • salt and pepper
  • cilantro adobo
  • 1 1/2 c fresh cilantro stems included
  • 3 bay leaves
  • 2 tsp cumin
  • 2 tsp dried thyme
  • 2 tsp ground pepper
  • 1 tbsp salt
  • 1/2 cup onion
  • 4-6 garlic cloves - depending on taste
  • 1 cup white wine vinegar
  • 1/2 cup vegetable oil
  • cilantro compound butter
  • 1/2 lb unsalted butter
  • 1/4 cup chopped cilantro
  • 1 garlic clove
  • 1 small shallot
  • juice and zest of 1 lime
  • salt and pepper

Preparation

Step 1

preheat oven to 400

saute' the veggies in a little olive oil and salt and pepper to taste

put all ingredients for adobo in blender or food processor and chop up real good n stuff

put tilapia on a greased pan so it doesn't stick...dur
spread a heaping helping of adobo over the tilapia. the more the better
put the tilapia in the oven until done. 8-10 minutes or until you can eat it without getting sick

make the butter

chop up the cilantro however chunky you like it
finely chop the shallot and garlic clove...unless you like big ass pieces of garlic...I dont
add to the softened butter
add the lime juice
salt and pepper to taste

put the veggies on a plate and add a dollop of the butter to melt over the veggies

once the fish is done place it on top of the veggies and let some stick out the sides to make it pretty and shit.

not put it in your face and enjoy
