Ingredients
- One Sicilian eggplant (approx. the size of a softball) cut into 1/4" slices
- Pasta sauce (no starch no sugar) at least 1/2 cup
- 1/4 c. olive oil
- 3 oz ricotta cheese
- 1/2 oz. parmesan cheese
- Kosher salt

Step 1
Preheat oven to 350 degrees.
Spray a small casserole dish with no-stick cooking spray.
Heat a medium flrying pan over medium heat, add olive oil. Salt the eggplant slices then fry until golden and soft. Drain on paper towels. Weigh out 6 oz. of eggplant and 2 oz. of spaghetti sauce.
In the casserole, layer eggplant, a little spaghetti sauce, ricotta, then more eggplant and end with a toppin of the sauce and the parmesean cheese.
Bake in 350 degree oven until bubly and browned on top (20 - 30 minutes - keep checking). This counts as 4 oz. Greysheet protein and 8 oz. cooked vegetable. Enjoy
