mac & cheese bites

Ingredients

• 12 oz macaroni
• 2 cups ritz crackers
• 3 cups shredded cheese
• 6 tbsp butter
• 1 pkg boursin cheese
• 2 eggs
• 2 tbsp cold butter
• 3/4 cup milk
• 1/4 cup sour cream
• 1/4 tsp salt
• pepper flakes

Preparation

Step 1

cook pasta according to directions on package
combine crackers, 1/2 c of cheese and butter, spoon into bottom of greased muffin tin
add pasta to rest of cheese, boursin, and cold butter
mix eggs, milk, sour cream and whisk to combine, add to pasta with salt and pepper
bake until light golden 20-25 minutes
