Tomatoes Stuffed with Guacamole (Jitomates Rellenos de Guacamole)

  • 4-6 medium tomatoes
  • Salt and freshly ground pepper to taste
  • 2-3 avocados, peeled, pitted, and mashed
  • 2 Tbs (30 ml) finely chopped onion
  • 2 Tbs (30 ml) chopped cilantro (coriander leaves)
  • 1 tsp (5 ml) fresh lime or lemon juice
  • 1-2 jalapeño peppers, seeded and finely chopped (optional)
  • Lettuce leaves for garnish (optional)

Step 1

Cut a slice off the top of the tomatoes and scoop out the insides to leave a thick shell. Sprinkle the inside with salt and allow to drain upside down for 15 minutes. Mix together the avocado, onion, cilantro, lime juice, optional jalapeños, salt, and pepper and stuff the tomatoes with the mixture. Serve chilled or at room temperature on a bed of lettuce leaves if desired. Serves 4 to 6.
