Quinoa with Chicken and Peas

Ingredients

  • 1 cup quinoa, rinsed well
  • 1 lb chicken cutlets, cut into strips
  • 1 medium onion, finely chopped
  • 1 3/4 cup low sodium chicken broth
  • 1 cup sweet peas
  • 3 cloves garlic, finely minced
  • 3 Tbsp evoo, divided
  • 1 Tbsp white wine vinegar
  • 2 Tbsp tomato paste
  • 1/2 cup Finely grated Romano Cheese
  • salt and pepper to taste

Preparation

Step 1

1. Marinate chicken with salt, peper, garlic and 1 Tbsp olive oil for 15 mins.
2. Saute onion in 2 Tbsp oil on low heat until soft, about 5 mins. Ad vinegar and tomato paste, mix well and saute for another 2 mins. Add marinated chicken and cook, covered for 10 mins or till chicken is no longer pink inside; turning chicken occasionally and coating with sauce.
3. Add quinoa and stir in chicken broth. Reduce heat, cover and cook for about 15 mins or till liquid is absorbed by quinoa. Mix in the peas and cheese and serve immediately.
