Ingredients

  • 4 cups (1 L) tomato juice
  • 1/4 cup (60 ml) port wine
  • 1 small bay (laurel) leaf
  • 1 stalk celery with leaves, chopped
  • 2 Tbs (30 ml) fresh or 2 tsp (10 ml) dried basil
  • 2 Tbs (30 ml) fresh or 2 tsp (10 ml) dried chives
  • 1 tsp (5 ml) fennel seeds
  • Salt and freshly ground pepper to taste
  • Sour cream for garnish (optional)
  • Chopped fresh chives, parsley, or basil for garnish (optional)

Preparation

Step 1

Combine all ingredients except the garnishes in a saucepan and bring to a boil over moderate heat. Simmer for 5 minutes, stirring occasionally. Strain and serve hot or cold. Garnish as desired. Serves 4 to 6.
