Orange-Chocolate Cheesecake Bars

Ingredients

  • CRUST:
  • 9 Whole Chocolate Graham Crackers
  • 1 Tbsp cut up Butter
  • 1 Large Egg White
  • FILLING:
  • 1-8 oz Low Fat Cream Cheese
  • 1 C Low Fat Sour Cream
  • 1/2 C + 2 Tbsp Sugar
  • 2 Large Eggs
  • 1/4 C Orange Juice
  • 2 tsp Grated Orange Peel
  • 3 Tbsp Unsweetened
  • Cocoa Powder

Preparation

Step 1

Bake 350° 9 inch square pan.
Heat oven now.

Line pan with tin foil; let foil
extend over each side. Coat foil
with non stick cooking spray.
Process crackers in food processor
until fine crumbs form. Add butter
and egg white. Pulse till crumbs
are moist. Press over bottom of
pan with a small measuring cup.
Bake 10 minutes or until firm.
Cool. Whisk cream cheese, sour
cream, 1/2 cup sugar, eggs,
orange juice & peel in a large
bowl until smooth. Remove 1/4
cup. Pour remaining batter on
cooled crust.
Stir cocoa, 1 tbsp water and
remaining 2 Tbsp sugar in a
cup to mix. Stir in reserved 1/4
cup batter until well blended.
Spoon over filling then drag a
toothpick through filling in a
spiral motion to create a marble
effect. Bake 30 minutes or until
firm around edges but slightly
jiggly in center. Cool in pan
on rack in fridge at least
3 hours until firm.
Holding foil at both ends, lift
to cutting board. Cut into bars.
4 equal strips. Cut each strip
in 6 bars.
