Ingredients
- 5 large egg yolks
- 1/4 cup sugar
- 1/2 cup pumpkin
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp vanilla
- 2 cups warm cream
- chopped candied ginger - optional

Preparation
Step 1
Beat together egg yolks and sugar. Add pumpkin and mix well. Add salt, cinnamon, ginger, vanilla and warm cream. Beat until well blended. Pour into ramekins and place filled ramekins in a baking pan. Pour boiling water in pan to 1/2 way up the ramekins. Bake in 325 oven for 15-20 minutes until starting to set. Add chopped candied ginger on top if desired and bake 10-20 minutes longer. Sprinkle with white sugar and put under broiler to brown or use kitchen torch.
