    lb. riceland rice, cooked and drained well

  • 3

    sticks butter, rice should be very yellow

  • 6

    egg yolks

  • 1

    cup grated Parmesan cheese


Mix well the above ingredients.Make your favorite meat sauce with a lot of ground beef. Cook and drain beef before adding to meat sauce.Let cool. Take your rice about the size of a tennis ball and make indention in middle. Place about 1 tablespoon sauce, shape around meat sauce into a ball. Make all of them and let firm up. Then dip each one in unwhipped egg whites, then in bread (dry) crumbs. You can use Italian flavored if desired. These can be frozen at this point. Tip: When making balls with rice, rub hands with oil to keep from sticking. When ready to deep fry, Dry until crisp like a fritter, Use a fryer o deep pan heated to 350@ Keep in a low oven while frying more of the rice ball's. This makes 50-75 ball's. She had a large family. Cut into half for a family of 6-8. She served these with additional sauce on plate.
