Beans-Elk Camp

Ingredients

  • 1 Lb. small white beans, soaked overnight then drained.
  • 1-6 oz. can apple juice
  • 5 C water

Preparation

Step 1

In the morning add:
3 lbs. smoked ham hocks or left-over ham chopped-up
1 lrg onion chopped
1 lrg apple, peeled and chopped
1 T brown sugar

Simmer until beans and hocks are tender. 6-9 hrs. in the crock pot. Great w/cornbread.
