Cookies: Raisin Pecan Oatmeal

Ingredients

  • 1 1/2 cups pecans
  • 2 sticks butter, room temp
  • 1 cup dark brown sugar, lightly packed
  • 1 cup sugar
  • 2 extra large eggs, room temp
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 cups old fashioned oats
  • 1 1/2 cups golden raisins

Preparation

Step 1

Preheat oven to 350*

Place the pecans on a sheet pan and bake 5 minutes, until crisp. Chop very coarsely.

Cream butter, brown sugar, sugar together on medium high until light and fluffy. With mixer on low, add eggs, one at a time, and the vanilla.

Sift the flour, baking powder, cinnamon into a med. bowl. Add the dry ingredients to the butter mixture. Add the oats, raisins and pecans and mix just until combined.

Drop 2" mounds on sheet pans. flatten slightly with a damp hand. Bake for 12 to 15 minutes.
