Ingredients
- 2 cups gluten free all-purpose flour- If your blend does not contain xanthan gum you will need to add it.
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs
- 1 cup of mashed ripe bananas- about 2 to 3 bananas
- 1/3 cup canola oil
- 1 cup grated carrots
- 1/2 cups chopped pecans (optional)
Preparation
Step 1
Preheat oven to 350°.
In a bowl combine gluten free flour, sugar, baking soda, nutmeg, cinnamon and salt. If you are adding xanthan gum add it at this point.
In a separate bowl, whisk the eggs, bananas and canola oil. Grate your carrots at this point if you haven’t already- I used my mini Cuisinart to do this because I can be lazy. Combine your wet ingredients (eggs,banana, oil) with your dry ingredients and stir until everything is well mixed together. Fold in grated carrots and pecans. Transfer in a greased 9 x5 loaf pan. Bake for for 50 to 60 minutes or until a toothpick comes out of the center clean. Let cool for a few minutes before transferring to a cooling rack to cool completely. Store in airtight container.
