Carrots and Zucchini with Cilantro

Ingredients

  • 1 pound carrots, cut into matchsticks
  • 3 medium zucchini, cut into matchsticks
  • 3 tablespoons butter, melted
  • 1/2 cup chopped cilantro or parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

In a steamer, cook the carrots until crisp-tender, about 15 minutes. Add the zucchini for the last 5 minutes. (Or if your steamer isn't big enough, steam them separately.)

Transfer the vegetables to a large bowl and toss with the butter, cilantro, salt, and pepper.
