Ingredients
- Crust:
- Mix 2 cups graham cracker crumbs (16 whole graham crackers=2cups)
- 1 tsp. cinnamon
- 1/4 cup sugar
- 3/4 stick melted butter.
- Filling:
- 16 oz softened cream cheese
- 1 cup sugar
- 3 eggs (at room temperature)
- 2 tsp.vanilla extract
- 1/2 tsp. almond extract
- 3 cups sour cream (24 oz. container less 2 tbsp.)
- Topping:
- 3/4 cup sour cream
- 2 tbsp. sugar
- 1 tsp. vanilla extract
Preparation
Step 1
Crust:
Mix 2 cups graham cracker crumbs (16 whole graham crackers=2cups), 1 tsp. cinnamon, and 1/4 cup sugar in food processor. Add 3/4 stick melted butter. Press in bottom & side of 9 inch springform cake pan.
Filling:
Blend cream cheese and sugar. Add eggs one at a time. Add extracts and dash of salt. Fold in 3 cups of sour cream. Pour into springform pan, put in waterbath and bake 350 degrees for 45 minutes till almost set. Remove from oven and cool 15 minutes.
Topping:
Blend 3/4 cup sour cream, 2 tbsp. sugar and vanilla. Spread evenly over cake. Bake 400 degrees 5 - 8 minutes. chill overnight or several hours.
