Ingredients
- 3 cups potatoes cut in small pieces
- 1/2 cup celery cut in small pieces
- 1/2 cup carrots cut in small pieces
- 1/4 cup onions cut in small pieces
- 1 tsp. parsley flakes
- 1 chicken bouillon cube
- 1 cup water
- Combine all in saucepan. Cover and simmer 20-30 minutes or until veggies tender.
- 1-1/2 cups milk
- 2 Tabl. Flour
- 8 oz. Velveeta cheese, cubed
- 1/4 cup cubed cooked ham
- Gradually add milk to flour, stirring until well blended. Then add milk mixture to veggies. Cook until thickened. Add ham and velveeta. Stir until melted.

My addition: For extra flavor, add a Killians Irish Red Ale (or other dark beer)!
