Ingredients

  • 1 tbsp coconut oil
  • 1 large sweet potato or yam (japanese yam works best)
  • 5 - 6 eggs
  • You can saute some cut up onions & garlic in pan before the potatoes - remove from pan then add back in on top of the potatoes - add eggs on top of everything.

Preparation

Step 1

grate the potato with a box grater or food processor.

heat oil in nonstick skillet - add the potato - once the potato has browned on the bottom - flip it in sections.

Crack eggs on top of the potatoes - add 1 tbsp water to pan - cover with the lid - this will steam the eggs. Keep an eye on the eggs until cooked to your liking.
