Spinach Potatoes

Ingredients
- 2 T Butter
- 1 Large Onion, chopped
- 6 Ounces Pancetta Bacon, finely chopped
- 5 Large Potatoes, peeled and thinly sliced
- 20 Ounces Frozen Chopped Spinach, thawed and drained
- 4 Cups Shredded Mexican Cheese
- 1 Pint Heavy Cream

Preparation
Step 1
Preheat oven to 350. Lightly grease a medium baking dish
Boil potatoes until slightly tendered.
Melt butter in a skillet over medium heat, and sauté the onion and pancetta until onion is tender and pancetta is cooked through.
Alternately layer the potato slices, pancetta and onion mixture, spinach, and cheese in the prepared baking dish. Pour the heavy cream over all.
Cover and bake 1 hour. Uncover, and continue baking 30 minutes, until bubbly and lightly browned.
