Ingredients

    cup plain Greek yogurt

  • 2

    tbs olive oil

  • 1

    tbs lemon juice

  • 1

    large clove garlic, diced

  • 2

    green onions, chopped

  • 1

    tbs minced fresh mint

  • 1

    tsp ground cumin

  • ¼

    tsp salt

  • ¼

    tsp pepper

  • 2

    lbs boneless, skinless chicken thighs

Directions

1. Mix the yogurt, olive oil, lemon juice, garlic, green onion, mint, cumin, salt and pepper in a med bowl until incorporated. 2. Place chicken in a heavy zip lock bag. Pour three quarters of the yogurt mix over the chicken, turning well to coat. Reserve remainder for basting. Let chicken marinate for 25 min at room temp. 3. Meanwhile prepare grill. If using charcoal, use medium-hot coals. If using a gas grill, preheat burners to high, then reduce to medium. 4. Place the chicken on the grill. Discard the marinate. Grill for 5 minutes, occasionally basting with the remaining yogurt. Turn and grill continuing to baste for another 5 minutes or until cooked through. Remove to a platter and let rest for 5 min.
