Coffee Buttermilk Cake
- 2 Cups All-purpose Flour
- 2 Cups Sugar
- 1 t Baking Powder
- 1/2 t Baking Soda
- 1 1/3 Cups Buttermilk
- 1/2 Cup Butter
- 1 t Vanilla
- 4 Egg Whites
- 4 t Espresso Powder
Preheat oven to 325.
In a bowl combine flour, sugar, baking powder, baking soda, espresso powder and salt.
Add buttermilk, butter and vanilla.
Beat on low speed for 30 seconds, scraping bowl.
Beat on medium to high speed for 2 minutes, scraping bowl occasionally.
Add egg whites and beat for 2 minutes more, scraping bowl.
Pour batter into greased and floured 9 inch pan.
Bake for 45 minutes to 1 hour.
