Homemade Butter

Ingredients

  • 2 cups heavy cream
  • pinch or two of salt, optional

Preparation

Step 1

Pour 2 cups of heavy cream into a food processor.
Put on high.
After about 2 minutes, you will see that the cream has separated into buttermilk and curds.
Pour off the liquid.
Add 1/8 cup of ice water.
Replace lid and turn pulse 4 times.
Pour out liquid.
Again, add 1/8 cup ice water, replace lid and pulse 4 times.
Pour off any remaining liquid.
Place butter in strainer.
Gently press butter down with a spoon and stir it to get any excess liquid out.
Put in a bowl.
Add salt, if desired, and stir until well incorporated.
You can also add flavorings, if desired, like chives, garlic, thyme, chilies, fruit zest, etc.
