Ingredients
- 1 dozen green squash
- 1 can tomato puree
- 2 cups water
- 1 clove garlic, chopped
- dried mint
- stuffing
- 1 cup rice, rinsed in cold water
- 1 1/2 lbs beef
- 1/4 stick butter, melted
- 1/2 cup canned tomatoes
- salt and pepper to taste

Step 1
Combine stuffing ingredients and mix well.
Core squash. Rinse with cold salted water. Stuff, leaving approximately 3/4 inch opening unfilled to allow rice to expand. Place in pan, add tomato puree and water. Add garlic and sprinkle dried mint on top of sauce. Cover and cook on low fire about 35 minutes until tender.
