Ingredients

  • 4 bell peppers (2 red, 2 yellow), diced
  • 1 lb. lean ground beef
  • 2 tablespoons garlic, minced (2-3 cloves)
  • 1/2 cup green onions, chopped
  • 1/4 cup lemon juice
  • 4 celery stalks, diced
  • 1 15oz can garbanzo (chickpea)beans, rinsed and drained
  • 1 0.7 oz packet italian salad dressing mix
  • 1/4 cup parmesan cheese, grated
  • 1 tsp. extra virgin olive oil

Preparation

Step 1

Preheat oven to 350 degrees. Spray a casserole dish with nonstick cooking spray and set aside.

In a large skillet, add ground beef and cook over medium heat. Cook until no longer pink; drain and place in a bowl. Set aside.

In same skillet, add olive oil, vegetables and garlic and cook until vegetables have softened - 4 to 6 minutes.

Return ground beef skillet and add lemon juice, italian seasoning, beans and 1 tablespoon water. Using a spoon, mix all ingredients together and simmer for 2-3 minutes.

Transfer mixture to a casserole dish, sprinkle with cheese and bake 15-20 minutes.
