Ingredients
- 8 cups (2 L) peeled russet or Yukon Gold potato chunks (2 inch/5 cm)
- 1/4 cup (50 mL) oil
- 1/2 tsp (2 mL) salt
- 1/8 tsp (0.5 mL) freshly ground pepper

Preparation
Step 1
Cook potatoes in boiling salted water until almost tender. Drain potatoes and cool for 10 minutes.
Preheat oven to 400ºF (200ºC). Grease a rimmed baking sheet or line with nonstick foil or parchment paper.
Combine potatoes and oil; toss until coated. Place potatoes in a single layer in prepared pan. Sprinkle with salt and pepper.
Bake, uncovered, for 45 – 50 minutes or until potatoes are tender and golden brown. Serves 8.
