Ingredients

  • 1 1/2 c diced candied fruits
  • 1/2 c each, raisins, golden raisins, and currants
  • 1/2 c apricot brandy
  • 3/4 c light brown packed sugar
  • 1/3 c butter
  • 1 egg
  • 1 c flour
  • 1 c chopped walnuts
  • 1/2 t each baking soda, & salt
  • 1/2 t each allspice & cinnamon
  • 1/4 t nutmeg
  • extra candied cherries sliced in half to top

Preparation

Step 1

marinade fruit, raisins & currants overnight in brandy

cream sugar, butter & egg.
mix together flour soda, salt, & spices & stir in.
mix in walnuts & marinaded fruits
spoon batter into 1 3/4 inch mini muffin tins lined with baking cups
fill 3/4 full, top with cherry half
bake at 350 for 30 minutes
while warm top with brandy to taste
