Ingredients

  • 1

    lb ground beef

  • 1/4

    cup dry whole wheat bread crumbs

  • 1/4

    cup fat-free milk

  • 3

    Tbsp finely grated onion

  • 3

    Tbs chopped parsley

  • 2

    Tbsp grated Parmesan cheese

  • 1

    (26 oz) jar fat-free tomato and basil sauce

  • 1

    large egg, beaten

  • 1/4

    tsp salt

  • 1

    tsp olive oil

  • 1/2

    cup shredded fat-free mozzarella cheese

Directions

Mix beef, bread crumbs, milk, onion, parsley, Parmesan, beaten egg and salt in large bowl. Shape into 4 patties Heat oil in large non-stick skillet over medium heat. Add patties and cook until browned. 5-6 minutes per side. Pour sauce around patties; bring to boil. Reduce heat and simmer, covered, spooning sauce occasionally over patties (10-15 minutes) Top meat loaves evenly with mozzarella. Cover and cook until cheese melts, about 30 seconds. 1 loaf=313 calories, 22g carbs, 2g fiber.
