Chicken and Sausage Jambalaya

Ingredients
- 2 tsp. oil
- 1 lb. smoked sausage
- 1 lb. chicken
- 2 cups chopped onions
- 3/4 cup chopped greenpeppers
- 2/4 cup chopped ceelry
- 1 cup long grain rice
- 1- 14 1/2 oz. can chopped tomatoes
- 1 Tbl. garlic
- 2 cups water
- 4 bay leaves
- 1/4 tsp. thyme
- salt & cayenne to taste

Preparation
Step 1
1. Heat oil in large sauce pan over medium heat. Add sausage and cook for 2 minutes then add onions, pepppers and celery. Season with salt and Cayenne. Cook until vegetables are tender.
2. Add rice,cooked chicken, tomatoes, garlic, bay leaves, thyme and water. Cook for 20-30 minutes or until rice is tender. Add more salt and cayenne if needed
3. Remove from heat and let set for 5 minutes. Remove Bay leaves.
