Ingredients
- 1 T olive oil
- 1 onion
- 2 garlic cloves
- 1/4 t basil
- 1/4 t oregano
- 1/8 t pepper
- salt
- 1 T tomato paste
- 1 lb boneless skinless chicken breasts
- 1 can lentils, drained
- 1 can diced tomatoes
- 3/4 c low sodium chicken broth
- 4 oz/4 cups baby spinach

Preparation
Step 1
heat oil and add onion, garlic and spices. cook 4 minutes
add tomato paste and chicken and cook for a few minutes.
add lentils, tomatoes and broth and cook until chicken is cooked through, 7 to 10 minutes. stir in spinach and cook until wilted.
