Ingredients

  • 2 slices bacon or bacon grease
  • 1 can Rotel (replaces tomatoes)
  • 12 oz Clamato or V8 or Bloody Mary mix is good!
  • Chipotle Tabasco sauce-- 1 TBSP
  • 2 tsp old bay
  • Seafood Magic-- 1 TBSP
  • 2 bag frozen onions/celery/peppers (mixed)
  • 2 - 3 cloves garlic
  • oil-- 1/3 c if needed
  • 8 beef bouillon cubes
  • 4 c water
  • 16 oz bag frozen okra
  • 4 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp pepper
  • 1/2 tsp ground bay leaves-- or 3 bay leaves
  • 2 lb catfish
  • 12 oz shrimp
  • 1 pkg crawfish
  • Smokies or andouille sausage
  • rice

Preparation

Step 1

Saute celery, onions, and peppers and garlic in bacon grease with oil added if necessary to saute veggies. Dissolve bouillion. Add all ingredients through catfish and simmer for about 30 minutes, then add the smokies or sausage and shrimp while rice is cooking
